We’ve been loving our CSA share this summer…from some absolutely delicious garlic scapes at the start of the summer, to tasty pattypan squash and now an abundance of beetroot. The last couple of weeks beetroot has been on the “choice” table, the table from which we are able to choose 2 or 3 items in addition to the items common to all shares.
With a couple of beet bunches in the fridge, I wanted to try something a little different. Enter the idea to make Chocolate Beetroot Brownies! I found a tasty looking recipe online, and with little Mausi happily drawing on a large piece of paper taped to the counter side, I got to work.
I’ve eaten wonderful beet chocolate cake before, but I don’t remember it being quite this moist! These turned out almost a little too moist, and are a bit sticky to eat with fingers. Perhaps I added a bit too much beet. Never-the-less, they are very tasty, and eaten from a bowl with vanilla icecream and a spoon…mmm!
Note on preparation: The recipe called for microwaving the beets. As we don’t have one, I simply boiled the beets in their skins, and when tender I ran them briefly under cold water and then rubbed off the skins.
